It's weird that oils are controversial. At least two studies have found a significant reduction in heart attacks when you supplement oils.
So what's the deal? Well, some feel that oils are processed and therefore bad. Olive oil doesn't grow on a tree, olives do. Others feel that the best health benefit comes from diets that are very low in fat. And, in their defense, only very low-fat diets have been conclusively found to shrink blocks in arteries.
However, given the robust research that oils and other healthy fats actually reduce heart disease, as well as the reality that food doesn't taste so good without some oil involved, I think it's fine to indulge.
Just be aware that moderation is important when it comes to oils, as they are extremely rich in calories. A tablespoon of olive oil has 120 calories - the same as 2 pounds of celery.
