Dilly white beans

From J.L. Fields essential Vegan Meal Prep, this great northern bean recipe is easy, affordable, extremely healthy, and (if you can believe it) delicious!


1 teaspoon extra-virgin olive oil or 1/4 cup vegetable broth

1 small sweet onion, cut into half-moon slices

2 (14.5 oz) cans great northern beans, rinsed and drained

1/2 cup vegetable broth

2 teaspoons dried dill

1/2 teaspoon salt (optional)

1/4 teaspoon freshly ground black pepper


1. In a large skillet or wok over medium-high heat, heat the olive oil. Saute the onion slices for 3-5 minutes, until the onion is translucent.


2. Add the beans, broth, dill, salt (if using), and pepper. Bring to a boil. Reduce the heat to low and simmer, uncovered, for 10 minutes. 


3. Transfer to a large storage container, or scoop 1/2 cup of beans into each of 6 storage containers. Let cool before sealing the lids. 


Storage: Place the airtight containers in the refrigerator for up to 5 days or freeze for up to 3 months. To thaw, refrigerate over-night. Reheat in the microwave for 1 1/2 to 3 minutes. 


We serve this over baby kale or spinach, with a touch of extra olive oil as a dressing.
