Cider and Sunflower Dressing

From the excellent First Mess Cookbook, by Laura Wright


Ingredients

  • 1/4 cup apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 3/4 – 1 cup filtered water
  • 1/4 teaspoon gluten-free tamari soy sauce
  • 1 teaspoon dijon mustard
  • 2 teaspoons pure maple syrup
  • 1 clove garlic, chopped
  • salt & pepper, to taste
  • 3/4 cup raw sunflower seeds, soaked for 4 hours


1. To a blender, add the apple cider vinegar, lemon juice, water, tamari, Dijon mustard, maple syrup, garlic, salt, and pepper. Blitz the mixture on medium-high speed until creamy.


2. With the blender on low, remove the small feed cap in the middle of the lid. with the blender running, slwoly drizzle in the sunflower oil. After you've added all the oil, stop the blender. Place the feed cap back on, and then whiz the dressing on high for a few seconds to fully combine. Store the dressing in the refrigerator for up to 1 week.
